INGREDIENTS
* 3 bulbs garlic
* 2 tablespoons olive oil
* 1 (1 pound) loaf Italian bread
* 1/2 cup butter
* 1 tablespoon chopped fresh parsley (optional)
* 2 tablespoons grated Parmesan cheese (optional)

2. Bake for 30 minutes, or until garlic is soft.
3. Set the oven to broil. Slice the loaf of bread in half horizontally, and place cut side up on a baking sheet.

INGREDIENTS
* 12 eggs
* 1/2 cup mayonnaise
* 4 slices bacon
* 2 tablespoons finely shredded Cheddar cheese
* 1 tablespoon mustard
DIRECTIONS
1. Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.
2. Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.
3. Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon and cheese. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.

SERVINGS - 4
INGREDIENTS
* 2 medium shredded russet potatoes
* 1/2 medium finely chopped onion
* 1/4 cup all purpose flour
* 1 egg
* 1 cup oil for frying
* salt and pepper
DIRECTIONS
1. Rinse shredded potatoes until water is clear, then drain and squeeze dry. Place shreds in a bowl, and mix in the onion, flour and egg until evenly distributed.
2. Heat about 1/4 inch of oil in a large heavy skillet over medium-high heat. When oil is sizzling hot, place potatoes into the pan in a 1/2 inch thick layer. Cover the whole bottom of the pan, or make separate piles like pancakes. Cook until nicely browned on the bottom, then flip over and brown on the other side. It should take at least 5 minutes per side. If you are cooking them in one big piece, it can be cut into quarters for easier flipping.
3. Remove from pan, and drain on paper towels. Season with salt and pepper and serve immediately.
