INGREDIENTS
* 4 oz butter
* 4 oz sugar
* 4 oz self raising flour
* 2 eggs
* 2 apples
* 1 tablespoon butter
* 1 tablespoon brown sugar
DIRECTIONS
1. Measure out the butter and sugar and cream them together. Then beat in the eggs, then the self raising flour. You should end up with a soft but not runny mix. If it really is too solid, you can add a little milk, but be careful not to add too much.
2. Line the bottom of a 7.5in square baking tin with baking paper (this is optional, but makes it a lot easier to get the cake out afterwards). Spoon the mix into the tin, levelling it off.
3. Peel the apples (use a knife if you don’t have a peeler). Cut them into thin slices (I quarter them, then slice each quarter into three). Lay them on top of the cake mix in the tin. Whether you do it in a pretty pattern or not is up to you.
4. Melt the butter (for the top of the cake). Brush the melted butter over the apples. This is to stop them drying up in the oven. There should be enough melted butter to just cover all the exposed apple. If you don’t have a pastry brush, then dribble the melted butter over instead, and smear it over the apples with your fingers. Sprinkle over the brown sugar. When it’s cooking, this sugar and butter will combine to make a toffee taste.
5. Put the tin in the oven at 350 degrees F (180 degrees C). This needs to cook for about 45 minutes. At the end, the cake should be risen and brown.

* 6 (1 ounce) squares semisweet chocolate
* 1/3 cup unsalted butter
* 3/4 cup buttermilk
* 1/2 cup white sugar
* 1 egg
* 1 1/2 teaspoons vanilla extract
* 1 2/3 cups all-purpose flour
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup mini semi-sweet chocolate chips
DIRECTIONS
1. Preheat the oven to 400 degrees F (205 degrees C). Line 12 muffin cups with papers.
2. In a small saucepan over low heat, melt the semisweet chocolate together with the butter. Let stand until cooled, about 10 minutes.
3. Lightly beat the egg. In a small bowl, stir together the chocolate-butter mixture with the buttermilk, sugar, egg, and vanilla, until blended well.
4. In a large bowl, stir together flour, soda, and salt. Make a hole in the center of the dry ingredients, pour in the chocolate mixture, and stir until just combined. Stir in the mini chocolate chips. Spoon the batter into the lined muffin cups.
5. Bake at 400 degrees F (205 degrees C) for 20-25 minutes or until a toothpick inserted in the center of a muffin comes out clean. Remove muffin tin from oven and let stand at least 5 minutes, before removing the muffins and letting them cool on a wire rack. Serve warm or cooled; can be frozen as well.

INGREDIENTS
* 2 cups all-purpose flour
* 1/2 cup white sugar
* 3 teaspoons baking powder
* 1/2 teaspoon salt
* 3/4 cup orange juice
* 1/3 cup vegetable oil
* 1 egg
* 1 tablespoon orange zest
DIRECTIONS
1. Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
2. In a medium bowl, combine flour, sugar, baking powder, orange peel and salt; mix well. In a small bowl, combine orange juice, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
3. Fill cups 2/3 full. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

* 1 1/2 cups nonfat milk
* 2 large banana, mashed
* 2 Granny Smith apples - peeled, cored and shredded
* 1 tablespoon grated orange zest
* 1 teaspoon vanilla extract
* 1/4 cup white sugar
* 3 tablespoons water
* 1/2 teaspoon ground cinnamon
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
2. In a large bowl, stir together flour, 1/2 cup sugar, salt and 1 teaspoon cinnamon. Stir in milk, banana, apples, orange zest and vanilla extract. Spoon batter into prepared muffin cups.
3. Bake in preheated oven until golden brown, about 25 to 30 minutes. Check bake time by inserting a toothpick into the center of a muffin. The muffins are done when the toothpick comes out clean.
4. While muffins bake, combine 1/4 cup white sugar and 3 tablespoons water in a small saucepan. Bring mixture to a boil and cook for 1 minute. Brush glaze over baked muffins, then sprinkle muffins with as much cinnamon as you like.

* 1/2 cup chopped pecans
* 1/4 cup packed brown sugar
* 2 tablespoons butter, softened
* 1 (8 ounce) package cream cheese, softened
* 1/3 cup packed brown sugar
* 2 eggs
* 3/4 cup pumpkin butter
* 1 (9 inch) prepared graham cracker crust
DIRECTIONS
1. Combine pecans and 1/4 cup brown sugar; cut in butter or margarine with a pastry blender until mixture is crumbly. Set aside.
2. Beat cream cheese at high speed of an electric mixer until smooth. Add 1/3 cup brown sugar; beat well. Add eggs one at a time, beating well after each addition. Stir in pumpkin butter. Pour mixture into crust.
3. Bake at 350 degrees F (175 degrees C) for 40 minutes.
4. Sprinkle pecan mixture over pie. Bake for 5 additional minutes, or until butter or margarine and sugar melt. Cool on a wire rack. Cover, and chill for at least 4 hours.
