Tasty Pumpkin Pie

INGREDIENTS

* 1 medium sugar pumpkin
* 1 tablespoon vegetable oil
* 1 recipe pastry for a 9 inch single crust pie
* 1/2 teaspoon ground ginger
* 1/2 teaspoon ground cinnamon
* 1 teaspoon salt
* 4 eggs, lightly beaten
* 1 cup honey, warmed slightly
* 1/2 cup milk
* 1/2 cup heavy whipping cream

DIRECTIONS

1. Cut pumpkin in half, and remove seeds. Lightly oil the cut surface. Place cut side down on a jelly roll pan lined with foil and lightly oiled. Bake at 325 degrees F (165 degrees C) until the flesh is tender when poked with a fork. Cool until just warm. Scrape the pumpkin flesh from the peel. Either mash, or puree in small batches in a blender.

2. In large bowl, blend together 2 cups pumpkin puree, spices, and salt. Beat in eggs, honey, milk, and cream. Pour filling into pie shell.

3. Bake at 400 degrees F ( 205 degrees C) for 50 to 55 minutes, or until a knife inserted 1 inch from edge of pie comes out clean. Cool on a wire rack for 20 minutes.

Nana’s Banana Bread

INGREDIENTS

* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup butter
* 3/4 cup brown sugar
* 2 beaten eggs
* 2 1/3 cups mashed overripe bananas

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.

2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.

3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Simple Scones

INGREDIENTS

* 2 cups all-purpose flour
* 1/3 cup sugar
* 1 teaspoon baking powder
* 1/4 teaspoon baking soda
* 1/2 teaspoon salt
* 8 tablespoons unsalted butter, frozen
* 1/2 cup raisins (or dried currants)
* 1/2 cup sour cream
* 1 large egg

DIRECTIONS

1. Adjust oven rack to lower-middle position and preheat oven to 400 degrees.

2. In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.

3. In a small bowl, whisk sour cream and egg until smooth.

4. Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)

5. Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

English Flapjacks

INGREDIENTS

* 1/2 cup butter or margarine
* 1/2 cup packed brown sugar
* 4 tablespoons golden syrup or corn syrup
* 3 cups rolled oats
* 1/4 cup raisins

DIRECTIONS

1. Preheat the oven to 350 degrees F (175 degrees C).

2. In a saucepan over low heat, combine the butter, brown sugar and golden syrup. Cook, stirring occasionally, until butter and sugar have melted. Stir in the oats and raisins until coated. Pour into an 7 or 8 inch square baking pan. The mixture should be about 1 inch thick.

3. Bake for 30 minutes in the preheated oven, or until the top is golden. Cut into squares, then leave to cool completely before removing from the pan.

Healthy Bran Muffins

* 1/2 teaspoon salt
* 2 tablespoons packed brown sugar
* 1 1/4 cups all-purpose flour
* 1 tablespoon baking powder
* 1 1/2 cups whole bran cereal
* 1 1/2 cups vanilla soy milk
* 1 tablespoon olive oil
* 2 egg whites

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C).

2. Sift together the salt, sugar, flour, and baking powder in a large bowl. In a separate bowl, combine the bran cereal and soy milk; allow to rest for 5 minutes before whisking in the olive oil and egg whites. Fold the dry ingredients into the wet. Spoon batter into muffin cups.

3. Bake in preheated oven until lightly browned, about 20 minutes.
