INGREDIENTS
* 1 cup whole macadamia nuts, divided
* 1/2 cup butter, softened
* 1 cup sugar
* 2 eggs
* 1 1/2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1 cup mashed ripe bananas
* 1/2 cup raisins
* 1/2 cup flaked coconut
DIRECTIONS
1. In a food processor or blender, process 1/2 cup macadamia nuts until ground; set aside. Chop remaining nuts; set aside. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda, salt and ground nuts; stir into creamed mixture just until moistened. Fold in bananas, raisins, coconut and chopped nuts
2. Pour into a greased 9-in. x 5-in. x 3-in. loaf pan. Bake at 350 degrees F for 65-70 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

* 2 tablespoons vegetable oil
* 1 onion, chopped
* 1 teaspoon minced garlic
* 1 teaspoon chili powder
* 1 tablespoon ground cumin
* 1 cup uncooked short-grain white rice
* 1 3/4 cups chicken broth
* 1/4 cup tomato paste
DIRECTIONS
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Heat the oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until onion is translucent. Stir in the chili powder and cumin, and cook for about 30 seconds. Add the rice, chicken broth and tomato paste, and bring to a boil. Transfer to a 1 quart casserole dish, and cover with aluminum foil or a lid.
3. Bake for 35 to 40 minutes, or until liquid has been absorbed and rice is tender. Let rest for 3 to 5 minutes before serving.

* 1 (.25 ounce) package active dry yeast
* 3 tablespoons sugar, divided
* 1/4 cup warm water (105 degrees to 115 degrees)
* 1 cup milk, scalded
* 3 tablespoons butter or margarine
* 3/4 teaspoon salt
* 1 cup whole wheat flour
* 3 cups all-purpose flour, divided
* 1 egg, beaten
* Cornmeal
DIRECTIONS
1. Dissolve yeast and 1 tablespoon sugar in water. Set aside. In a mixing bowl, combine milk, butter, salt, whole wheat flour and 1 cup all-purpose flour. Beat well with an electric mixer. Add egg and yeast mixture; beat until smooth. By hand, stir in enough remaining all-purpose flour to make a soft dough.
2. Knead on a lightly floured surface until smooth and elastic, about 6-8 minutes.
3. Place in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour.
4. Punch dough down. Place on floured surface. Roll to 1/2-in. thickness. Cut into 4-in. circles. Allow to rise until doubled.
5. Lightly sprinkle an electric fry pan or griddle with cornmeal. Bake over low heat for 10 minutes until nicely browned. Turn and bake 10 minutes longer. Cool. Store in the refrigerator. To serve, split with a fork and toast.

* 1/3 cup warm milk (110 to 115 degrees F)
* 4 tablespoons butter or margarine, melted, divided
* 1 egg
* 1 cup all-purpose flour
* 1/2 teaspoon salt
DIRECTIONS
1. In a mixing bowl, dissolve yeast in warm water. Add sugar; let stand for 5 minutes. Add the milk, 1 tablespoon butter and egg; mix well. Add flour and salt; beat until smooth.
2. Cover and let rise in a warm place until doubled, about 45 minutes.
3. Brush griddle and 3-in. metal rings or open-topped metal cookie cutters with remaining butter. Place rings on griddle; heat over low heat. Pour 3 tablespoons of batter into each ring. Cook for 7 minutes or until bubbles begin to pop and the top appears dry. Remove rings.
4. Turn crumpets; cook 1-2 minutes longer or until the second side is golden brown. Serve warm or let cool on a wire rack and toast before serving.
