Simple Thanksgiving Meatloaf

INGREDIENTS

* 2 1/2 pounds ground turkey
* 1 1/2 cups chicken-flavor stuffing mix
* 2 eggs
* 1/3 cup milk

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).

2. Mix together turkey, stuffing, eggs, and milk in a large bowl. Mixture will be lumpy. Spread mixture in 9×5 inch loaf pan.

3. Bake for 1 hour until temperature reads 165 degrees F in center of loaf.

Pumpkin Roll

INGREDIENTS

* 3 eggs
* 1 cup white sugar
* 2/3 cup solid pack pumpkin puree
* 1 teaspoon lemon juice
* 3/4 cup all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 2 teaspoons ground cinnamon
* 1 teaspoon ground ginger
* 1 cup chopped pecans
* confectioners’ sugar for dusting
* 1 (8 ounce) package cream cheese
* 4 tablespoons butter
* 1 cup confectioners’ sugar
* 1/2 teaspoon vanilla extract
* confectioners’ sugar for dusting

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10×15 inch jellyroll pan.

2. In a large bowl, beat eggs and sugar with an electric mixer on high speed for five minutes. Gradually mix in pumpkin and lemon juice. Combine the flour, baking powder, salt, cinnamon, and ginger; stir into the pumpkin mixture. Spread batter evenly into the prepared pan. Sprinkle pecans over the top of the batter.

3. Bake for 12 to 15 minutes, or until the center springs back when touched. Loosen edges with a knife. Turn out on two dishtowels that have been dusted with confectioners’ sugar. Roll up cake using towels, and let cool for about 20 minutes.

4. In a medium bowl, combine cream cheese, butter, 1 cup confectioners’ sugar, and vanilla. Beat until smooth. Unroll pumpkin cake when cool, spread with filling, and roll up. Place pumpkin roll on a long sheet of waxed paper, and dust with confectioners’ sugar. Wrap cake in waxed paper, and twist ends of waxed paper like a candy wrapper. Refrigerate overnight. Serve chilled; before slicing, dust with additional confectioners’ sugar.

All American Apple Pie

INGREDIENTS

* 1 1/2 cups all-purpose flour
* 1/2 cup vegetable oil
* 2 tablespoons cold milk
* 1 1/2 teaspoons white sugar
* 1 teaspoon salt
* 6 Fuji apples, cored and sliced
* 3/4 cup white sugar
* 3 tablespoons all-purpose flour
* 3/4 teaspoon ground cinnamon
* 1/2 teaspoon ground nutmeg
* 1/2 cup all-purpose flour
* 1/2 cup white sugar
* 1/2 cup butter

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).

2. To Make Crust: In a large bowl, mix together 1 1/2 cups flour, oil, milk, 1 1/2 teaspoons sugar and salt until evenly blended. Pat mixture into a 9 inch pie pan, spreading the dough evenly over the bottom and up sides. Crimp edges of the dough around the perimeter.

3. To Make Filling: Mix together 3/4 cup sugar, 3 tablespoons flour, cinnamon, and nutmeg. Sprinkle over apples and toss to coat. Spread evenly in unbaked pie shell.

4. To Make Topping: Using a pastry cutter, mix together 1/2 cup flour, 1/2 cup sugar and butter until evenly distributed and crumbly in texture. Sprinkle over apples.

5. Put pie in the oven on a cookie sheet to catch the juices that may spill over. Bake 45 minutes.

Bacon Cheddar Deviled Eggs

INGREDIENTS

* 12 eggs
* 1/2 cup mayonnaise
* 4 slices bacon
* 2 tablespoons finely shredded Cheddar cheese
* 1 tablespoon mustard

DIRECTIONS

1. Place eggs in a saucepan, and cover with cold water. Bring water to a boil and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. To cool more quickly, rinse eggs under cold running water.

2. Meanwhile, place bacon in a large, deep skillet. Cook over medium-high heat until evenly brown. Alternatively, wrap bacon in paper towels and cook in the microwave for about 1 minute per slice. Crumble and set aside.

3. Peel the hard-cooked eggs, and cut in half lengthwise. Remove yolks to a small bowl. Mash egg yolks with mayonnaise, crumbled bacon and cheese. Stir in mustard. Fill egg white halves with the yolk mixture and refrigerate until serving.

Cranberry Pumpkin Cookies

INGREDIENTS

* 1/2 cup butter, softened
* 1 cup white sugar
* 1 teaspoon vanilla extract
* 1 egg
* 1 cup solid pack pumpkin puree
* 2 1/4 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 cup cranberries
* 1 teaspoon ground cinnamon
* 1 tablespoon orange zest
* 1/2 cup chopped walnuts

DIRECTIONS

1. Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.

2. In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in vanilla, egg and pumpkin. Sift together the flour, baking powder, baking soda, salt and cinnamon; stir into mixture until well blended. Cut the cranberries in half and stir into mixture along with the orange zest and walnuts. Drop by teaspoonfuls onto cookie sheets.

3. Bake for 10 to 12 minutes.
