Turkey Tomato Pizza

INGREDIENTS

* 1 (10 ounce) can refrigerated pizza crust
* 2 teaspoons sesame seeds
* 1/4 cup reduced-fat mayonnaise
* 1/4 teaspoon grated lemon peel
* 1 cup (4 ounces) shredded reduced-fat Mexican-blend cheese
* 1 teaspoon dried basil
* 1/4 pound thinly sliced deli turkey, julienned
* 3 bacon strips, cooked and crumbled
* 2 small tomatoes, thinly sliced
* 1 cup shredded reduced-fat Swiss cheese
* 2 tablespoons thinly sliced green onions

DIRECTIONS

1. Unroll the pizza crust onto a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Flatten dough and build up edges slightly. Prick dough several times with a fork; sprinkle with sesame seeds. Bake at 425 degrees F for 10-12 minutes or until lightly browned.

2. Combine the mayonnaise and lemon peel; spread over crust. Sprinkle with Mexican or mozzarella cheese and basil. Top with turkey, bacon, tomatoes and Swiss cheese. Bake for 7-9 minutes or until the crust is golden brown and cheese is melted. Sprinkle with onion.

Simple Thanksgiving Meatloaf

INGREDIENTS

* 2 1/2 pounds ground turkey
* 1 1/2 cups chicken-flavor stuffing mix
* 2 eggs
* 1/3 cup milk

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).

2. Mix together turkey, stuffing, eggs, and milk in a large bowl. Mixture will be lumpy. Spread mixture in 9×5 inch loaf pan.

3. Bake for 1 hour until temperature reads 165 degrees F in center of loaf.

Cheesey Turkey Meatloaf

INGREDIENTS

* 2 pounds ground turkey
* 1 cup milk
* 1 cup Italian seasoned bread crumbs
* 2 eggs
* 1 teaspoon salt
* 1/4 teaspoon pepper
* 3/4 pound Colby cheese, cut into 1/2-inch cubes
* 1/2 cup ketchup (optional)

DIRECTIONS

1. Preheat oven to 400 degrees F (200 degrees C).

2. In a bowl, mix the turkey, milk, bread crumbs, and eggs by hand. Season with salt and pepper. Fold the cheese cubes into the mixture. Transfer to a loaf pan, and top with ketchup.

3. Bake 1 hour in the preheated oven, to an internal temperature of 180 degrees F (85 degrees C).

Turkey Cabbage Rolls

INGREDIENTS

* 1 cup water
* 1/2 cup uncooked long grain white rice
* 16 large cabbage leaves
* 2 tablespoons olive oil
* 1 pound ground turkey
* 1/3 cup chopped onion
* 1 egg, beaten
* 1 (8 ounce) can tomato sauce
* 1/2 teaspoon salt
* 1/2 teaspoon ground black pepper
* 1 (8 ounce) can tomato sauce
* 2/3 (6 ounce) can tomato paste
* 1 cup water
* 3 tablespoons brown sugar
* 2 teaspoons lemon juice
* 1 teaspoon Worcestershire sauce
* 2 cups baby carrots, sliced lengthwise (optional)

DIRECTIONS

1. In a pot, bring 1 cup water and rice to a boil. Reduce heat to low, cover and simmer for 20 minutes.

2. Preheat oven to 350 degrees F (175 degrees C). Butter a 9×13 inch casserole dish.

3. Bring a large pot of water to boil. Reduce heat to low and place cabbage leaves in pot. Simmer 4 to 5 minutes, until tender. Drain leaves and set aside.

4. Heat oil in a skillet over medium heat and cook turkey and onion until turkey is brown and onion is tender. Transfer turkey and onion to a bowl, cool slightly, and mix in cooked rice, egg and 1 can tomato sauce. Season with salt and pepper.

5. In a separate bowl, mix 1 can tomato sauce, tomato paste, water, brown sugar, lemon juice and Worcestershire sauce.

6. Scatter carrot slices evenly over bottom of casserole dish. Spread cabbage leaves on a flat surface and place about 2 tablespoons turkey mixture in the center of each leaf. Fold edges of leaves over filling, then roll into logs. Place cabbage rolls seam side down in dish over carrots. Pour sauce evenly over rolls.

7. Cover and bake 1 hour in the preheated oven. Remove cover during last 10 minutes of cook time. Allow to sit 5 minutes before serving.

Slow Cooked Turkey Chilli

INGREDIENTS

* 1 tablespoon vegetable oil
* 1 pound ground turkey
* 2 (10.75 ounce) cans low sodium tomato soup
* 2 (15 ounce) cans kidney beans, drained
* 1 (15 ounce) can black beans, drained
* 1/2 medium onion, chopped
* 2 tablespoons chili powder
* 1 teaspoon red pepper flakes
* 1/2 tablespoon garlic powder
* 1/2 tablespoon ground cumin
* 1 pinch ground black pepper
* 1 pinch ground allspice
* salt to taste

DIRECTIONS

1. Heat the oil in a skillet over medium heat. Place turkey in the skillet, and cook until evenly brown and drain.

2. Coat the inside of a slow cooker with cooking spray, and mix in turkey, tomato soup, kidney beans, black beans and onion. Season with chili powder, red pepper flakes, garlic powder, cumin, black pepper, allspice and salt.

3. Cover, and cook 8 hours on Low or 4 hours on High.
